Yields 10 guests

Ingredients for the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put the listed items into a pot, heat until it reaches a simmer, mixing until the sugar dissolves. Next, turn off the burner and leave to cool down fully. Decant into a sterilised bottle, cap it and store in the fridge, where it will keep for up to four weeks.

To make Batch Mix: Pour the specified spirits and syrup into one sizeable container, allow it to infuse for an hour, then strain preferably using muslin, making it completely strained.

To serve: Add 85ml from the premix to a stirring glass filled with ice, gently stirring gently for a minute to chill. Filter to a chilled martini glass or a similar vessel, decorate with some cranberries and complete it with a brief mist of mandarin oil above the glass.
